I just learned this today people so I'm passing it on to you.

That's right, cooking the turkey upside down causes all the fats and juices to pool and drizzle into the breast meat! You'll have perfectly-cooked dark meat and moist breast meat!

If you're really into having a golden brown turkey, flip it back for the last 30 minutes of cooking in higher temperatures and let the breast exterior darken.
